Ingredients
200 g chicken breast
1 small potato
1 carrot
1 zucchini
1 bell pepper
1 teaspoon olive oil
1 teaspoon of tomato paste
Thyme
Black Pepper

How to Make It
- Cut the chicken breast and vegetables into cubes that are as similar in size as possible. This will ensure that all the ingredients cook in about the same amount of time.
- In a bowl, mix the olive oil, tomato paste, and spices. Add the chopped chicken and vegetables to this mixture and toss well so that everything is coated with the sauce.
- Spread the mixture you’ve prepared in a single layer on a baking sheet lined with parchment paper. Make sure the pieces don’t overlap. Bake in a preheated 190°C oven for about 30–35 minutes. Once you’re sure the chicken is fully cooked, serve hot. Cut the chicken breasts and vegetables into cubes of roughly the same size.
